provide instructional readme

Good first move on this, thanks @AisjaThijssen!

As a next step, I advise making the readme more accessible.

Deliverable:

• A "how to use this repository" with Quarto, for an example, see: https://github.com/AaronGullickson/aog-article-quarto or Elsevier: https://github.com/quarto-journals/elsevier
• Readme should also allow for direct integration of our template via GitHub (https://quarto.org/docs/extensions/starter-templates.html) -- I think there is some Git integration
• Readme needs to have screenshots of the template so people can get inspired
• Include an inspirational introduction on how a quarto template can make work and study life easier
