This is a latex thing, so it may be a dependency change in matplotlib.

There exists a workaround for this. By adding the following text to the notebook, the latex renders correctly (see microsoft/vscode-jupyter#8131 (comment)).

Maybe we should add this into the code? In TARDIS v2024.11.11 this is still an issue, but is fixed with the above workaround

While the immediate issue is resolved, I will leave this open so that we can revisit the solution.
