Prefect Server tags are all over the place right now, the only reliable one is the latest tag, which is what the Chart.yaml triggers off of.

Ideally, Prefect Server should have versioned releases which are also pinned on the Docker images, at which time we can convert the Chart version to align with the Prefect Server version to eliminate confusion as to which version is being installed.
