For ec2 discovery to work properly in us-west-2 the value for cloud.aws.region in elasticsearch.yml must be set. It would be useful if the cookbook had support for setting this based on a value in node.json.

Absolutely -- in fact, eu-west-1 needs setting cloud.aws.endpoint directly. I'll look into that.
