Update tesseract library to 5.x

Now that Tesseract 5.x is available, perhaps it's time to update Tesseract-MacOS as well!

I spent some time looking into this today without success. Looks like some of the dependencies have changed as well, and in addition the header files under /include also need to be updated to their latest versions. This is a much larger project that I won't get myself into at the moment.

I tried moving a bunch of the compiled static library files of various dependencies that came with my brew installation of tesseract to replace those under /lib. Compiling this resulted in some errors about undefined symbols in the header files, which I assume all of which need to be updated for tesseract and all of its recursive dependencies (50+ files)

We can keep this open in case someone else wants to contribute.
