- 1 cup oatmeal
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1 cup brown sugar
- 1 cup sugar
- 1/2 cup shortening
- 2 eggs
- 1 teaspoon vanilla extract
- 6 tablespoons butter
- 1/4 cup cream
- 1 cup chopped nuts
- 1 cup coconut
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
CAKE: Pour 1 1/2 cups boiling water over 1 cup of oatmeal and let stand for 20 minutes. Combine all dry ingredients and set aside. Cream together brown sugar, sugar, vanilla and shortening and add eggs. Add gradually the dry ingredients, oatmeal and vanilla until everything is wet. Pour into a greased 9 x 9-inch pan, bake at 350° 35-40 min Frosting goes on warm cake.
