[Feature] Allow target platform/application to inject logging implementation for Linux #22828

Feature description

Currently in the SDK provided Linux platform implementation, the default Logging implementation only have options to logged to stdout or via pigweed. For some devices it would be desired to provide its own logging implementation, so the log can be outputted to the proper location (such as a file) and have consistent logging for the entire application.
