We have the very same problem with a customer. The emails are sent to the customer and not to the address defined in the Let's Encrypt settings for that domain. At first, that address was accidentally set in LE settings. After changing it to the correct address, the information reached Plesk (checked in database) but emails still go to the old address.
On top of that, we are experiecing rate limit problems for that domain (can be seen directly after chaning the Let's Encrypt settings when a manual renewal is triggered) because it seems that Plesk doesn't see that there is a valid certificate. At least it's trying to renew the certificate every hour. This problem seems to be related to the other one because we don't have that problem with other domains on the same server.
