Is your feature request related to a problem? Please describe.

It's hard to inspect the state of the DEX, because the available RPC methods don't allow making many useful queries (what trades have happened? what arb has happened?).

Describe the solution you'd like

#2572 defines, but does not implement, a number of RPC methods useful for inspecting the DEX state. We should fill them in.
