would be nice to see more output from polkadot-launch so that we can see what's going wrong. Could -v, -vv and -vvv be wired up so that we get more details about what it's doing. (E.g. exact execution calls with all the arguments etc. so it can show you what magic it is doing.)

The readme is good at showing how to crank up the debug on the launched parachains and relay chains, but does not mention how to get more debug output for polkadot-launch itself.
