Currently we are just pointing to mybinder.org to fire up the environments, but we could actually run our own jupyter-hub (or binderhub) instances and have more control. Might not be necessary or desired.

Specifically, we could use the Kubernetes version for GCP https://zero-to-jupyterhub.readthedocs.io/en/latest/
