[BUG] Resolve workflow failures on main branch following 3.0 bump #560

What is the bug?
PR #556 bumped the main branch of this plugin to 3.0, and with that, we saw unexpected failures in the github test workflows.

The unit and cypress test workflows are currently failing with the following error. Further investigation is needed to resolve.

As mentioned in comment #556 (comment), the OPENSEARCH_VERSION is now redundant, and can be removed.

The unit test failures were resolved in PR #561

The cypress test failures still require investigation.
