[FEATURE] Can we not have the latest version support both opensearch 1.x and 2.x #169

Planning to use the API for telegraf output plugin since there are workaround based solutions available for elasticsearch output plugin.
Plugin should support both opensearch 1.x and 2.x.
I'm new to golang, please suggest if there is an alternative available.

This is very much a child of opensearch-project/opensearch-clients#17. There are a few issues such as #146 that you could help with. I'd start by expanding integration tests with multiple versions of OpenSearch and removing OpenDistro ala https://github.com/opensearch-project/opensearch-java/blob/main/.github/workflows/test-integration.yml.
