There aren't many enums left in v2.x but for those which do remain, we should make sure that the docs make it clear on the permitted values

I think we can just make a PATCH release with the enum values added to the descriptions for those fields; it doesn't change the meaning of the standard at all.

We might also want to describe the intended meanings of the values, but that may be contentious so should involve the community
