The REST lesson is one of a handful of lessons that are still mostly unchanged from their initial "PoC" stage. They weren't really written to be complete - they were written to prove the capabilities of the system. So this PR goes back and provides a solid foundational stage one, with plenty of planned room for future stages we'll be expanding on.
