zenrancid is running without any issues at 2am, sends notices that process completed fine and I have emails on the system showing changes to configurations. However, configuration updates never show in zenoss under rancid configurations. I can see that configurations last updates on 2013-09-08 at 8AM when I ran zenrancid manually but nothing from the automated runs at 2AM

The name of the device needs to be resolvable. If the device is named router123 in /etc/hosts add the IP address
You need to add the login credentials in configuration properties. Drop to a cli and double check to make sure your credentials work from zenoss.
Be patient. Once you have all of this complete, zenrancid run needs to run, and then the device needs to remodel to find the new file. You can double check the files at /opt/zenoss/rancid/var/Routers/configs/. If you want to test switch to zenoss user...su zenoss and then run zenrancid run. You should see the config populate in the /Routers directory. Next the device needs to remodel, and then you should be good to go.
