I have tried to build a newer version but it seems that google changed the way the library is built.
I don't mind doing the work, but will need some help to get started as it seems to be impossible to even clone the project at the moment: MSYS2: impossible to clone pdfium project.

@asmwarrior thank you very much for the pointer, I've switched to using pdfium-binaries - but I wouldn't know how to use this information to update pdfium-git. pdfium looks like a real beast to build from source!
The latest version of pdfium that can be built:

Is 4 years old and includes a number of serious vulnerabilities, like this one (and many more):
