Post opensearch migration: Remove old kibana elastic search

Background

Note: We can only delete elastic search after 366days of the logs being stored in the new cluster

Now we have migrated over to open search delete the old elastic search in terraform and remove the output from fluent-bit.

Definition of done

• readme has been updated
• user docs have been updated
• another team member has reviewed
• smoke tests are green
• prepare demo for the team
