For passover
- 3 medium apples (Gala and/or Granny Smith), peeled and grated
- 1 1/2 cups walnut halves, toasted (275° for 20 mins), and coarsely chopped
- 1 cup red wine, simmered for ~20 mins (down to ~1/2 cup), + honey to taste
- 1 Tbsp lemon juice
- zest of one orange
- 1 1/2 tsp ground cinnamon
- 1 Tbsp packed brown sugar

While the walnuts toast and wine simmers, peel and grate the apples.

In large bowl, stir together all ingredients. Refridgerate until ready to serve.
