Update the samples to the SDK style project

Is your feature request related to a problem? Please describe.
When cloning the project, I can't run the samples straight away and the csproj is not an sdk style project to getting it to work is a pain.

The samples project to use the sdk style project, potentially even run Dotnet 8?
