Is there any plans to migrate this container to a newer PHP version?

If I create a PR, should this let the user choose, and explicitly run matomo with PHP 7.4/8.0/8.1 versions of the image?

It looks as though PHP 7.4 is now in the security-only part of its lifetime. See: https://www.php.net/supported-versions.php

I noticed in the Matomo 6.5.1 release notes, they is some mention of fixes for compatibility with PHP 8.1 but this does not sound like PHP 8.1 is not quite fully supported.
