Migrate to status subresource for CRD updates #151

We didn't do this initially because subresource was still alpha in 1.10, but now that we require 1.11+ we can leverage it and not have to update an entire instance of the CRD: https://v1-11.docs.kubernetes.io/docs/tasks/access-kubernetes-api/custom-resources/custom-resource-definitions/
