Valet WordPress wp-admin is 500 error

Clear description of your problem

WordPress install running fine, frontend working, can click on links etc. no 404 anywhere.
Navigate to wp-admin however I see an error 500

Expected behavior

wp-admin should show login screen without error 500

Current behavior

See: 500 Internal Server Error nginx/1.21.1
