website: build on node 16 since 18 is broken

See https://app.netlify.com/sites/jestjs/deploys/635813952677880009aff473 vs https://app.netlify.com/sites/jestjs/deploys/635889b4fe8a9300087cbd5a. I have no idea why it fails with v18, the error message is useless.
