When using jambonz as a SRC the XML metadata in the SIPREC Invite contains a param of jb:carrier which is the carrier name used for the call.
This carrier name contains user generated data and could therefore contain invalid characters for XML, for example the ampersand &

We should escape this string before creating the XML
