add additional tags to help users better pin their ci/cd processes to known/tested versions. /an immutable tag?

Yes. Sounds like we need an epic to improve packaging.

On the immutable tag front, while not pointing users directly to the option I feel it is a small lift to additionally tag images with the commit-ish or full commit hash that triggered the build.
