Create AU Patient Summary examples for two CFG test data scenarios

As of the 5/2/25, the current build of AU PS FHIR IG is considered 'complete' for normative profile drafting.
Create AU Patient Summary IG examples for the two Clinical Focus Group (CFG) test data scenarios that currently exist:

• Referral to Specialist & Allied Health > Patient-johnson-joyce
• Interstate GP visit > Patient-banks-jeramy-ezra
