build(deps): bump quic-go up to (at least) v0.42.0

While browsing the API for the quic-go library, it appears that the quic-go version this project uses has a security vulnerability leading to a potential denial of service (see https://pkg.go.dev/vuln/GO-2024-2459).

To ensure this project is not affected, this library should be bumped up to (at least) version 0.42.0. However, I think this will require rewriting some parts as its API changed.
