I use pyinstaller:
get with: pip -install pyintaller
Run this in console on src folder:
python -m pyi-makespec -n GuiXYZ_V2_1 -i "<yourpath>\img\eye-in-a-sky-icon.ico"  Gui_XYZ_GImage_V2.py
python -m PyInstaller --clean  GuiXYZ_V2_1.spec
or
pyi-makespec -n GuiXYZ_V2_1 -i "<yourpath>\img\eye-in-a-sky-icon.ico"  Gui_XYZ_GImage_V2.py
Then this:
PyInstaller --clean  GuiXYZ_V2_1.spec
Then run copy_folders_to_dist.py file to copy folders into distribution folder:
python .\copy_folders_to_dist.py

Clean manually the file log files content in temp folder. Dont delete the files.

Then I use  Inno Setup to pack it into a single exe file:
