Monorepo: New Default Hardfork Cancun

One of the remaining breaking tasks is to update our default HF from Common (and therefore: everywhere throughout the monorepo), coming back every year in a Christmas-like way. 😋

This time it would be an update from Shanghai -> Cancun, last update here was done in #2655 to update to Shanghai.

Should not be that much work this time, we already made a lot of (test) code "hardfork-proof" in the latest rounds.
