Update simulation code to ultimately produce date

In order to best demonstrate a real world example of the package. I think this might need to happen with a new simulate_dates or similar function.

Simulate times then make into dates? Would seem hard to simulate the dates themselves. Then could just be convert to dates?

We agreed on an initial package release on 2024-11-21 (tomorrow). This is a somewhat large feature which doesn't appear to have work on it currently. I would suggest it might be future work rather than included in the release.
