Current icon with white background and black text doesn't match other themed icons on the homescreen

@ua741 it seems that themed icons are already implemented ->

<monochrome android:drawable="@drawable/ic_launcher_foreground"/>

Should be just a matter of enabling Themed icons in phone settings as explained here

Yes, you are correct.

It appears that running flutter packages pub run flutter_launcher_icons:main removes the monochrome icon.
We've updated the build steps for F-Droid, so we hope this issue will be resolved in the next update.
