Add sentry config for rust crypto

Updated posthog url (cosmetic, target same server) and added a new sentry env.

Sentry: Created a new Env in order to monitor specificly issues on the release using the rust crypto sdk
Posthog: Updated the posthog URL to match web (see this PR)
