Telemetry

We want to collect usage metric, to learn about number of running server, amount of transactions replicated, total bytes sent etc. Telemetry is on by default and we users to opt-out, similarly to many other OSS tools.

• We're starting with a small set of metrics to track, and make it easy to add more continuously. It makes sense to re-use our OTEL setup to push these metrics, but we can discuss alternatives.
• We create a page informing users about metrics being tracked, how to opt-out, how we treat data privacy and how they can receive the same informations as us.
