In Advanced Settings, it would be great to add a new setting named 'format:defaultLanguage', with default value 'English'.
This new setting lets to define which language is used by default to format number, byte, percent and currency ; using numeral.js.

In the idea, when this setting is edited, the same combobox than the "Language" one on http://numeraljs.com/ is shown.

Indeed !
It is fixed by PR #14019

It is available since Kibana 6.2.
The advanced setting is named format:number:defaultLocale
