Kibana version: Any version reporting ui_metrics

Describe the bug:

ui_metrics are incomplete and inconsistent because it's using the simple find method in SavedObjects, so it's only getting the first 20 entries.

Use a findAll method to run through all the entries (similar to https://github.com/elastic/kibana/blob/master/src/legacy/core_plugins/telemetry/server/collectors/application_usage/telemetry_application_usage_collector.ts#L64-L78)
