Waiting on #54077.

Now that the data plugin has a new search service which allows custom search strategies to be registered, we no longer need the old registry around to handle things like rollups support (once #54077 is implemented). We should refactor the search source to use the search service directly and remove pretty much everything in the fetch and search strategy directories.
