Edit fields data display values

I would like to do some editing of how values in the chart appear in visualization.

For example: I would like to get all values of a pie chart to be capitalized.
I can do that by creating a scripted field but in that case I can't filter or query based on that field.
The values of the charts are same as given from elasticsearch with a little twaek.
