[EuiDataGrid and EuiTable] Provide better real world data example

We need to follow-up on #5461 with a better real-world data example for https://elastic.github.io/eui/#/tabular-content/data-grid. These types of examples "Say hi" and "Say bye" can be improved and also be used to trigger a popover and a flyout.
