Add missing entry about OAUTH2_CLIENT_SCOPE into deployment.yaml

I want to be able to determine all the values required for operation via defined config files,
so that all configurations are available and described in one place.

• For that the missing entry about OAUTH2_CLIENT_SCOPE needs to be added into Tractus-X deployment.yaml:
