Only one custom configuration file and environment variable is available,when create a mongo: 6.0.5 container using the Docker Compose file

Sorry, looking at this again, It looks like you should probably swap entrypoint: ["mongod", "--config", "/etc/mongo/mongod.conf"] to command: ["--config", "/etc/mongo/mongod.conf"] if you want to use our image entrypoint (and thus get the functionality it provides, which includes the environment variables you've specified).
