Update Node

We want to upgrade node to the LTS version (14.17.5). Doing this seems to have consequences around how we're handling Sass (versions are incompatible). However, updating tailwind to 2.0 before this may resolve the issues. Be prepared to do some Next js config changes, like removing the use of @zeit. But again, the tailwind upgrade may also resolve this. So that should be a blocker to this.
