I think this is a bug:

Hi @kasperpeulen
ACE editor syntax highlighting is not that evolved. It doesn't parse MathJax expressions in the editor, so basically, text between _ is interpreted as an italic text (plain Markdown syntax). I could add some rules in ACE to avoid this but it's a bit tricky and it has to be configurable since MathJax extension can be disabled in StackEdit.

A solution I would be happy with is having a option to disable ACE editor syntax.

That's not possible for now, but you can use the light swicth to enable light mode: http://benweet.github.io/stackedit/?light

That's a compatibility mode for mobile browsers. The problem is that you won't have the format buttons and the undo/redo functionality.

@benweet Ace editor also has latex highlighting: http://ace.c9.io/build/kitchen-sink.html I would really like to have an option to use the latex highlighting instead of markdown highlighting. This would be much more usefull to me (and probably any mathematician).
