Several workshops - update to reflect supported regions due to Cloud9 expansion

Some workshops call out the specific regions where the workshop should be run, which is mainly due to Cloud9 support but possible instance types as well. Cloud9 has now expanded to more regions, so we need to add those to relevant workshops, for example:
