Well this took a hot minute to track down the root cause.
All multi touch track pad gestures (scroll, zoom, app expoe etc) build up increasing amount of lag & dropped frames over long periods of time on the integrated ProMotion display.
This lag does not occur during screen recordings or on external monitors. Nor does it happen if the ProMotion display is set to a max 60 Hertz
This has been happening for months / years and up until now I've thought it was an macOS issue as the only fix I knew was to restart the whole system (putting to sleep does nothing). This apple forums thread I just today found said that the MiddleClick app was the culprit. So I tried restarting that instead and it fixed it.
This is the best video I have atm showing off the bug.

Unfortunately it takes about 2 weeks to build up to a noticeable level, so if any more videos are needed ill add them later as I just restarted the app which seems to have temporarily fixed the issue.

I am encountering the same issue and found it to be MiddleClick as well after systematically killing processes until the issue stopped. What's odd is that this does not affect all the Mac systems I use, only one, and I'm not sure what the difference is for that single machine.
If there's a way to capture some info that will be useful to investigating the cause of the issue, please let us know.
