Move some docs to markdown

Read the docs can use markdown with Sphinx: https://blog.readthedocs.com/adding-markdown-support/

I'm not a huge fan of restructured text, so this could be nice. We might also be able to simplify the process of putting the example notebooks into the docs--in an ideal world, we would no longer need pandoc for building the docs.
