The following lectures need updating to make use of CUDA=12.5 docker container

lecture-jax MAINT: use Github based GPU instance lecture-jax#181 (includes CUDA=12.5)
lecture-python.myst
lecture-stats

This can be paired with migrating to use GitHub Actions based instances
