after removing all the default bloat and unnecessary snap packages, onlyoffice-desktopeditors refuses to start. Apparently some of the "unnecessary" were actually required for the onlyoffice-desktopeditors, but it failed to declare them as necessary dependencies. Thus allowing me to remove them.

I don't think this is relevant for Onlyoffice. This is a problem with Snap's policy. It is possible that other apps from the Snap Store will not work after such actions. Most likely, you will need to completely reinstall Snap.

@XDmitryK how is this not relevant for OnlyOffice, if it doesn't start?

Does not compute, what you are trying to say here.

I mean other apps from snap work correctly? And reinstalling Onlyoffice solved the problem?
And what OS are you using?

Reinstalling onlyoffice solved the problem indeed -- because it did install a punch of "unnecessary" (being sarcastic here) additional snaps (that can be removed without snapd whining about it that something needs them ... BUT IT SHOULD. and not allow me to uninstall them) -- because IMHO they should have been be marked as NECESSARY for OnlyOffice. But they are not -- and that's the entire point of this "bug report".
There are no "other apps" from snap. I only keep snapd even enabled because of the onlyoffice. For now... but np, I will change it soon to OO apt version, so can get rid of the snapd entirely.

Kubuntu 24.04 LTS.

Well, that's what I'm getting at, that we can't influence the snap to change certain packages in it. We can't influence Snap and change their decisions about which packages are important and which are not.And if this is possible, then it is better to use deb\rpm packages.
