This STARS R-package GitHub Issue discussion led me down a great path:

Our covariate and data (AMADEUS) probably has some additional datasets and of course the processing piece. I don't want to delay things in regards to that. Perhaps we should keep this in mind for v2.0 release.

Some initial tests show that processing large amounts of data through STAC and rstac may be computationally time consuming. So we will continue with our download and process functions in AMADEUS. We may be able to find use cases for "download" (really API ping) and process functions that utilize rstac, particularly for small data sizes
