We want to streamline a few use cases for running the run_amip.jl driver:

make sure output dir doesn't end up being experiments/ClimaEarth/experiments/ClimaEarth/... when run from exp/ClimaEarth/ directory
running from the REPL (config file choice)
- want to support all ways users could run the code: including driver multiple times, copying lines into REPL, etc
changing a few config args from one run to the next in REPL, without re-running everything ?
- not sure if this is feasible to do generally
